Well folks, we did it! The olives are milled and the oil is now in its storage totes waiting to be racked twice and then bottled (about a 5 week process). However, Casa Rosa Farms is now offering pre-order of a limited run of our Olio Nuovo.
What is Olio Nuovo? Unfiltered olive oil needs to settle for about a month or two. As particles settle to the bottom, the top clearer oil is racked off and used for bottling. Settling time allows for a much longer shelf life, but also to mellow its taste. Oil that has not been settled is Olio Nuovo. It is the freshest of all olive oils. It tastes almost alive, can be very peppery, and can have a mildly bitter finish which, though it takes you aback at first, also keeps you coming back for more. You can taste and smell the orchard in it.
This is Olio Nuovo. Like all fresh foods, Olio Nuovo loses its character and health benefits the longer it sits around. Olio Nuovo may not be for you if you're one of those people who only use olive oil once a week or when you're cooking a particular dish. We recommend using up our Olio Nuovo within 3 months, which is a major distinction from racked olive oil which can hold its character for a year or more.
